Did you celebrate with us? Did you enjoy the delicious pasta salad and homemade treats? What about the iced tea? Well now you can enjoy all of them from your own kitchen! Read on to find all the perfect summer recipes we used during our Customer Appreciation/3rd Anniversary Celebration!

Who Wants Some Pasta Salad???

Don’t you just love a good pasta salad? It’s basically Summer in your mouth, right? The flavors, textures, and colors combine to make one amazing experience. And this pasta salad has all of that and is made with clean ingredients like Yellow Aspen tricolor fusilli pasta and Rosebud’s Real Foods seasonings! This pasta tends to soak up the oil as it sits in the fridge, but the flavor is wonderful even 2 or 3 days after it’s made. You can always add a little more oil right before you serve it if it looks a little dry. Here’s the recipe!

Summer Pasta Salad Recipe Ingredients

Salad:
  • 12 oz cooked Yellow Aspen Tricolor Fusilli Pasta
  • 10 oz halved cherry tomatoes
  • 1 small (2.25 oz)sliced and drained black olives
  • 8 oz shredded Mozzarella Cheese
  • 4 oz Salami – cut into strips
  • ½ C chopped green (or yellow) peppers
  • ¼ C chopped onions
Dressing:
  • ½ C Extra Virgin Olive Oil
  • 4 T Red Wine Vinegar
  • 1 ½ T Jane’s Italian Seasoning from Rosebud’s Real Foods
summer Pasta Salad Recipe Instructions:

Combine all salad ingredients in a large bowl. Whisk dressing ingredients in a small bowl or shake together in a small mason jar. Pour over salad and stir until everything is coated. Store in refrigerator.

Now we turn to the sweets on the table. These are summertime bars made with warm weather flavors. Strawberries and Lemon can’t be beat this time of year. And putting them in baked goods is a sure bet for any party or get-together. Let’s cover the Lemon Crumb Bars first.

Lemon Crumb Bars Recipe

Did you know that these bars have some whole grains in them? Who knew whole grains could taste so good!

Lemon Crumb Bar Recipe Ingredients

Crust and Topping:

Lemon Crumb Bar Recipe Instructions:

Preheat oven to 375° F. Grease a 9”x13” baking pan with butter or line with unbleached parchment paperlong skinny brown cardboard box of parchment baking paperIn a bowl, stir together the crushed wheat #1, crushed whole wheat, raw sugar, baking powder, and salt. Add the butter and cut it in until it resembles fine crumbs. Add the egg and mix until incorporated.

Press ⅔ of this mixture into the bottom of the prepared pan. Bake in 375° F oven for 10-12 minutes until the crust is matte (not shiny or wet looking) and starting to lightly brown.

While the crust is baking, mix together the sweetened condensed milk, lemon juice, lemon extract, and egg yolks. Gently pour this mixture over the baked crust while still warm and spread out with a spoon or spatula. Top the lemon filling with the remaining crumbs and return to the oven for 20-25 minutes until the top is lightly brown and filling is set.

Cool on a wire rack to room temperature and then chill in the refrigerator for 2 hours or until cold. Cut into squares and enjoy! Store leftovers in the refrigerator.

Strawberry Swirl Fudge Brownies Recipe

Not only are these swirled strawberry brownies delicious, they are also beautiful! The strawberries slide through these dark brown bars and maintain their gorgeous red color – without any food coloring! So let’s get to it!

Strawberry Swirl Fudge Brownies Recipe Ingredients:

Strawberry Swirl Fudge Brownies Recipe Instructions:

Preheat oven to 350° F. Grease a 9”x13” baking pan or line with unbleached parchment paper. 

Place the strawberries in a blender or food processor and process until pureed. Set aside.

In a large bowl, stir together the crushed wheat #1, crushed whole wheat, and salt.

In a medium saucepan, heat butter and chocolate chips just until melted. Be sure to stir so chocolate does not burn.

Whisk sugar and vanilla into the chocolate mixture. In a separate bowl beat eggs and then slowly add them to the chocolate mixture, whisking continuously so eggs do not cook. 

Add the chocolate mixture to the crushed wheat mixture and stir until blended. Pour this into the prepared pan and spread out with a spoon or spatula. Pour the pureed strawberries over the brownies and swirl with a butter knife. 

Bake brownies for 25-35 minutes, rotating pan halfway through. Bake until toothpick inserted in the center comes out clean. Cool on a wire rack and cut into squares. Share with your friends and neighbors! (Or eat them yourself – we don’t care!)

Summer in a glass

Iced Tea is always a harbinger of summer. After mowing the yard, walking the dog, or playing with the kids, nothing tastes better than a tall glass of iced tea – especially if it’s from Storehouse Tea in Cleveland, OH!

Here’s a cold brew iced tea recipe featuring their teas.

Fill a jar with water. Fill a tea infuser with your favorite loose leaf tea and place it in the jar. Put the whole jar in the refrigerator and let it steep for up to 24 hours – until you have the strength of tea you like! It’s that simple! If you want to sweeten your tea, you can add honey, maple syrup, or raw sugar to taste. This method will give you a smooth, delicious cup of iced tea!
